Ingredients (Serves 2)
- 4 fresh mackerel fillets
- 2 tbsp olive oil
- 2 cloves garlic, finely chopped
- 1 lemon (juice and zest)
- Small handful fresh parsley, chopped
- Sea salt
- Freshly cracked black pepper
- Optional: pinch of chilli flakes
Method
1. Prepare the Mackerel
Pat the mackerel fillets dry with kitchen paper. Season generously with sea salt and black pepper.
2. Heat the Pan
Place a frying pan over a medium-high heat and add the olive oil.
3. Cook the Fish
Lay the mackerel fillets skin-side down in the pan. Cook for 3-4 minutes until the skin becomes crispy and golden.
Carefully flip and cook for a further 1-2 minutes.
4. Add the Flavour
Reduce the heat slightly and add the garlic, lemon zest and chilli flakes (if using). Cook for 30 seconds before squeezing over the lemon juice.
5. Finish
Sprinkle over the fresh parsley and remove from the heat.
