A simple, healthy and flavour-packed dish that showcases fresh mackerel at its best. The rich, oily fish pairs perfectly with charred asparagus and a fresh squeeze of lemon.
Ingredients (Serves 2)
- 4 fresh mackerel fillets
- 1 bunch asparagus, trimmed
- 2 tbsp olive oil
- 1 lemon (zest and juice)
- 1 clove garlic, crushed
- 1 tbsp fresh parsley, chopped
- Sea salt
- Freshly ground black pepper
Method
1. Prepare the Mackerel
Pat the mackerel fillets dry with kitchen paper.
Mix 1 tbsp olive oil with the garlic, lemon zest, salt and pepper. Brush over the mackerel fillets and leave to marinate for 10 minutes.
2. Prepare the Asparagus
Toss the asparagus with the remaining olive oil and season lightly with salt and pepper.
3. Grill the Asparagus
Place the asparagus on a hot grill pan, BBQ or under a preheated grill.
Cook for 4–5 minutes, turning occasionally, until lightly charred but still with a little bite.
4. Grill the Mackerel
Place the mackerel fillets skin-side down on the grill.
Cook for 3–4 minutes until the skin is crisp and golden. Turn carefully and cook for a further 1–2 minutes until the flesh flakes easily.
5. Serve
Arrange the grilled asparagus on serving plates and place the mackerel on top.
Finish with a squeeze of fresh lemon juice, a sprinkle of parsley and a little extra cracked black pepper.

Chef’s Tip
